Couple of questions: have you ever heard of Pastina? If you have, do you find it packaged as tiny balls or tiny stars? These are the kinds of things commenters on my website like to tell me I’m wrong about 🤣 the thing is, I’ve seen it labeled as all of that!
Sharing a soup the last week of may feels right because it’s super cold here. 😜
CHICKEN PASTINA SOUP
6 cups water
3/4 cup pastina, also called acini de pepe
1/2 cup carrots diced
1/3 cup onion diced
1 cup chicken cooked, see note
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup peas
1/2 cup parmesan cheese
Combine all of the ingredients except the parmesan and peas in a large pot or dutch oven.
Bring to a simmer. Cook until the pasta is cooked through, about 10 minutes.
Add the peas and parmesan, stir and let cook another 2 minutes.
You can also used diced raw chicken, just make the pieces small enough to cook through within the cooking time.
